Potato and Cheese Croquettes
Bite-sized potato nuggets loaded with zesty Cheddar cheese, scallions, pimentos, and onions and deep-fried golden brown.

Combine first 4 ingredients. |

Add potatoes; mix well. |
| Egg yolks, large, lightly beaten (10 egg yolks) |

Beat in egg yolks; cool. |
| Cheddar cheese, sharp, coarsely grated |
4 1/2 cup
|
Stir in next 3 ingredients. Chill if desired. |

| Pimentos, chopped |
1/4 cup
|

|
Form into 1-ounce balls (#40 dipper). |
| Onion, dehydrated |
6 oz.
|
Rehydrate according to package directions; drain well. |
| Coating |
|
Lightly beat egg white with water. Coat balls with egg white, then crumbs. Coat again with egg white, then with onion, patting onion firm onto surface. Let stand 10 to 20 minutes to dry slightly. |
