Instructions

Ingredient Quantity Instructions
Water, boiling 2 qt. Combine first 4 ingredients.
Salt 1 1/2 tbsp.
White pepper 2 tsp.
Paprika 1 1/2 oz.
Potato PearlsĀ® Extra Rich 5 1/2 cup Add potatoes; mix well.
Egg yolks, large, lightly beaten (10 egg yolks) 1 cup Beat in egg yolks; cool.
Cheddar cheese, sharp, coarsely grated 4 1/2 cup Stir in next 3 ingredients. Chill if desired.
Scallions, chopped 1/2 cup
Pimentos, chopped 1/4 cup
Form into 1-ounce balls (#40 dipper).
Onion, dehydrated 6 oz. Rehydrate according to package directions; drain well.
Coating Lightly beat egg white with water. Coat balls with egg white, then crumbs. Coat again with egg white, then with onion, patting onion firm onto surface. Let stand 10 to 20 minutes to dry slightly.
Egg whites, large, lightly beaten 10  
Water, cold 3/4 cup
Bread crumbs, unseasoned, sifted 2 1/2 cup
Deep-fry at 375 F for 2 to 3 minutes or until crisp and deep golden brown.
