Mandarin Moo Shu Crepes
Shredded braised pork tossed with soy sauce, hoisin sauce, and green onions then stuffed in thin tempura-style potato cakes.

| Pork, boneless, braised, shredded | 3 gal. | Toss pork with hoisin sauce, soy sauce, and hot chili oil. Keep warm. |

| Heat griddle to 350 F. Portion 1/4 cup potato mixture onto well-oiled hot griddle. Cook 3 minutes or until golden on first side; turn over. Cook 2 minutes or until golden on second side. | ||
