Latin Hashbrowns

Prepare potatoes according to package directions. |

| Avacado, ripe, medium diced |
4 each

|
| Red onion, peeled, small, diced |
1 cup

|
| Garlic Cloves, minced |
1/4 cup

|
| Roma Tomato, medium diced |
1 1/2 cup
|
|
| Cilantro, fresh, rough chopped |
1/4 cup
|
|
| Jalapeno, seeded, devined, minced |
2 each
|
|
| Lime, jucie and zest |
2 each
|
|
| Kosher Salt |
1 1/2 tsp.

|
| Black pepper, freshly ground |
1 1/2 tsp.

| Cumin seed, toasted, ground |

In a medium bowl add all the other ingredients, mixing just enough to incorporate and remain chunky. Taste for seasoning. |

On a pre-heated and greased griddle add the potatoes and cook on one side until golden brown. |
