Buttermilk and Basil Mashed Potatoes An olive oil drizzle complements chopped fresh basil, buttermilk and half-and-half blended into Nature's Own® Potato Pearls® Premium Mashed potatoes, bringing the sun-splashed flavor of the Mediterranean to any menu.

Instructions

Ingredient Quantity Instructions
Buttermilk, low fat 1 cup
Basil leaves, fresh 1 oz. Combine buttermilk and basil in food processor; blend together until basil is chopped. Add mixture to milk; warm to 190° F maximum heat.
Whole milk 1 cup
Nature's Own® Potato Pearls® Premium Mashed Potatoes 1 lb.
Boiling water 3 1/2 qt. Attached whip to mixer bowl. Add boiling water and buttermilk-basil mixture. turn mixer on low speed. Pour dry potatoes into mixer bowl; mix for 10 seconds. Turn off mixer; allow potatoes to set for 10 minutes.
Turn mixer on low; mix 10 to 15 seconds until well blended.
Olive oil Garnish each serving with drizzle of olive oil.
*Variation with Naturally Potatoes®: Prepare 2 bags (10 lb.) Naturally Potatoes® Deluxe White Mashed according to package directions. Combine 1 cup (1 oz) packed fresh basil leaves with 1/4 cup olive oil in food processor; blend together until basic is chopped. Mix into prepared mashed potatoes until well blended. Garnish with olive oil drizzle.
